This excellent product is made from cooked grape must, aged by slow acidification and natural fermentation. During a long aging period the flavours concentrate in batteries of casks of different woods without the addition of chemicals and aromatic substances. Dark brown in color, rich and glossy, the traditional balsamic vinegar results in a perfectly thick syrup. All the certified producers of traditional balsamic vinegar of Modena are obliged to use the official spherical bottle with rectangular base in solid glass, as specified in the Standards of Production Guidelines.
