Traditional Balsamic Vinegar of Modena PDO “ACETAIA dei BAGO” (Protected Designation of Origin) in exclusive bottle with red cap certifying the minimum aging period of 12 years.

This excellent product is made from cooked grape must, aged by slow acidification and natural fermentation. During a long aging period the flavours concentrate in batteries of casks of different woods without the addition of chemicals and aromatic substances. Dark brown in color, rich and glossy, the traditional balsamic vinegar results in a perfectly thick syrup.
All the certified producers of traditional balsamic vinegar of Modena are obliged to use the official spherical bottle with rectangular base in solid glass, as specified in the Standards of Production Guidelines. This bottle certifies the best quality and is sealed with numbered mark.
On 17/04/2000 the Traditional Balsamic Vinegar of Modena obtained the designation PDO by the European Community. The bottle with red cap contains balsamic vinegar aged at least twelve years as the gold cap certifies the product aged 25 years and over.

Both products are of high quality and must be examined and approved by the certifying Authorities. The only difference is the time spent in the batteries of wooden casks and the resulting aging of the product.

None of the product may be withdrawn until the end of the minimum period of 12 years, absorbing magical scents from the wooden casks and getting its typical aroma. At the end of the aging period our precious condiment rich in flavour can be withdrawn from the last and smallest cask.
